Lemon Pie

Recipe Description

Recipe Ingredients

2 medium lemons
2 cups sugar
9 inch double crust pastry 
3 eggs

Instructions

Slice lemons, with rind, paper thin. Cover with sugar and let stand at least two hours at room temperature. Beat eggs and add to lemon mixture. Pour into unbaked crust; cover with top crust, cut slits in top crust. Bake at 450° for 15 minutes: reduce heat to 350° and bake for 20 minutes longer, or until crust is golden brown.
