Lemon Rice

Recipe Ingredients
1 cup rice, long grained
2 ˝ cups boiling water
1 onion diced
3 tablespoons margarine
1 garlic clove
˝ cup white raisins
˝ teaspoon dried basil
2 tablespoons grated lemon rind
1 teaspoon lemon juice
Instructions
Sauté onion in margarine, add rice and stir until margarine is absorbed; add remaining ingredients, cover and cook slowly for 20 minutes until all liquid is absorbed. This can be used as a side dish or a stuffing for veal or chicken. To reheat, put in casserole, cover, set in dish of hot water in 350° oven.
