Lemon Squares

Recipe Description

Recipe Ingredients

Juice and rind of 1 lemon
2/3 cup sugar
2 eggs
½ teaspoon unflavored gelatin
2 tablespoons water
1 tablespoon butter
In top of double boiler, cook lemon juice, rind, sugar and eggs until 
thick. Remove from heat; stir in gelatin which has been soaked in 
water. Stir in butter. Cool and chill.
Crust:
1 cup flour
1 cup flaked coconut
1 cup sugar
pinch of salt
1 teaspoon baking powder
½ cup butter
Cut butter into remaining ingredients with a pastry blender until 
flaky. Pack half of mixture into a lightly greased 9 inch square pan. 
Cover with lemon butter, then crumble remaining pastry over lemon butter. 
Bake at 350° for 20 minutes. Cool and cut in squares.
