Lime-Chocolate Squares

Recipe Description

Recipe Ingredients

1 envelope unflavored gelatin
¼ cup cold water
2 eggs
¾ cup sugar
1/3 cup light corn syrup
1 ½ cups chocolate wafer crumbs
2 cups light cream
1 teaspoon grated lime peel
½ cup lime juice
dash of salt
7 or 8 drops green food color
5 tablespoons butter, melted

Instructions

Soften gelatin in cold water, dissolve over hot water. Set aside. In large mixing bowl, beat eggs at high speed of electric mixer until slightly thickened (about 5 minutes). Gradually add sugar and corn syrup, beating constantly. Stir in cream, lime peel and juice, dissolved gelatin and salt. Add food coloring to tint a delicate green. Turn into a shallow pan; freeze until firm. Meanwhile, combine wafer crumbs and melted butter; reserve 1/3 cup of crumbs. Press remaining crumbs into bottom of 8 X 8 X 2 foil-lined pan; chill. Break frozen lime mixture into chunks in mixer bowl. Beat until smooth. Spread over chilled crust; sprinkle with the reserved crumbs. Cover and freeze until firm. To serve, let stand at room temperature for about ten minutes; cut into squares. 9 servings.
