Mashed Carrot and Potato Casserole

Recipe Description

Recipe Ingredients

4 potatoes
4 carrots
1 onion
3 tablespoons margarine
salt and pepper, to taste
1 egg

Instructions

Peel and cut vegetables. Boil in water until tender. Drain and mash vegetables with margarine, salt ad pepper until smooth. Beat in egg until light and fluffy. Pour into greased casserole and smooth top. Dot with margarine and sprinkle paprika over top. Bake uncovered in 350° oven until top is lightly brown. Serves 4. this may be frozen before baking.
