Matzo Balls

Recipe Ingredients
8 matzos
½ teaspoon nutmeg
4 eggs
2 tablespoons chopped parsley
1 teaspoon salt
1 small onion, chopped
¼ teaspoon pepper
2-3 tablespoons fat
¼ teaspoon ginger
Instructions
Soak matzos in water until soft and drain. Heat fat and fry onions until transparent, add matzos, roast until matzos are dry and form into one cohesive mass. Cool and add rest of ingredients, mix well, if the dough is too soft add 2 or 3 tablespoons matzo meal. Let stand for 20 minutes Form into balls. Boil in salted water for 20 minutes. Makes 18 – 20 large balls
