Meatballs with Pineapple and Peppers

Recipe Description

Recipe Ingredients

1 lb. Ground beef
1 egg
1 tablespoon cornstarch
1 teaspoon salt
2 tablespoons onion, chopped small
dash of pepper

Instructions

Form the above into 18 meatballs or more. Brown them in a small amount of oil and drain. Set aside. Sauce: to 1 tablespoon oil, add 1 cup pineapple juice and cook over low heat for a few minutes. Add to the sauce mixture: 3 tablespoons cornstarch, 1 tablespoon soy sauce, 3 tablespoons vinegar, 6 tablespoons water and ½ cup sugar. Cook until the juice thickens, stirring constantly. To the sauce add: 4 slices pineapple, cut into small pieces; 3 large green peppers, each cut into 12 to 15 strips lengthwise and the meatballs. Heat thoroughly in 350° oven about15 minutes, serve hot. May be frozen. Can also freeze meatballs separately and make sauce when ready to serve.
