Mock Lobster Salad

Recipe Description

Recipe Ingredients

4 lbs. haddock fillet
1 small onion, sliced
1 large can tomatoes (undrained)
1 teaspoon salt
5 stalks celery, diced
4 heaping tablespoons mayonnaise

Instructions

Place onion in pot and cover with alternate layers of tomatoes and fish. Add salt and cook slowly for 20 minutes or until fish is tender. Remove from pot and place in a bowl. Let stand for several hours or overnight in refrigerator. Drain liquid; flake fish, mash tomato pulp and add diced celery and mayonnaise. Toss lightly. Mixture should have a flaky consistency. Better when prepared a day ahead.
