Mushrooms and Zucchini

Recipe Description

Recipe Ingredients

˝ pound mushrooms
2 pounds zucchini
5 pieces candied ginger
2 teaspoons parsley
1 large onion, cut up
3 tablespoons butter
1/3 cup water

Instructions

Shred zucchini (unpeeled). Boil in 1/3 cup water for 3 minutes. Drain, let stand in colander so you don’t accumulate liquid. Sauté mushrooms, onion, ginger. Add zucchini and parsley. Season with salt, pepper and extra ginger to taste. Heat.
