Orange Meringue Charlotte

Recipe Description

Recipe Ingredients

2 cups orange juice
1½ cups matzo farfel (or 2½ cups broken matzos)
2 teaspoons grated orange rind
3 tablespoons melted shortening
3 eggs
½ cup sugar
1½ oranges, sectioned 

Instructions

Pour juice over matzos. Let stand 15 minutes. Add orange rind, shortening, 2 egg yolks and 1 whole egg, salt and ¼ cup sugar. Mix well. Pour into greased 1½ quart shallow baking dish 10 X 6 X 2. Top with orange sections. Bake in 350° oven for 25 minutes or until set. Remove from oven. Beat 2 egg whites until stiff but not dry gradually adding remaining sugar. Beat until very stiff. Spoon egg whites on top of pudding to make 6 or 8 meringues. Return to oven for 10 – 15 minutes or until meringues are lightly browned.
