Orange Pecan Stuffed Squash

Recipe Description

Recipe Ingredients

2 acorn squash
1 tablespoon brown sugar
1 tablespoon margarine
¼ teaspoon slat
¼ teaspoon grated orange peel
2 teaspoons orange juice
2 tablespoons chopped pecans

Instructions

Halve squash and remove seeds. Place cut side down on greased baking dish. Bake at 350° for 30 minutes until squash is tender. Scoop out pulp leaving thin shell. Stir together pulp, brown sugar, margarine, salt, orange peel and enough orange juice to make it fluffy. Refill shells, sprinkle with pecans and bake 10 minutes more. Serves 4.
