Passover Apple Cake

Recipe Description

Recipe Ingredients

9 egg yolks
3 tablespoons lemon juice
2 teaspoons grated lemon peel
2 cups granulated sugar
½ cup matzo cake meal
1/3 cup potato starch
9 stiffly beaten egg whites
4 cups apples, cored, pared and sliced
2 tablespoons water
½ cup chopped nuts
1 tablespoon lemon juice
1 teaspoon cinnamon

Instructions

Beat egg yolks, lemon juice and peel until thick. Gradually add 1 cups sugar beating until smooth. Sift ½ cup sugar with cake meal and starch; blend into yolk mixture. Fold in beaten egg whites. Spread half the batter in 13 X 9 X 2 inch ungreased pan. Bake at 325° for 30 to 35 minutes. Meanwhile, cook apples with water, covered, over low heat till barely tender. (8 to 10 minutes). Drain. Stir in ½ cup sugar, walnuts, lemon juice and cinnamon. Pour over baked cake, cover with remaining batter. Return to oven and bake 50 minutes more.
