Passover Apple Dessert

Recipe Ingredients
3 eggs, separated
½ cup oil
¼ cup orange juice
¾ cup sugar
1 cup matzo meal
½ teaspoon salt
3 or 4 apples, peeled and sliced thinly
¼ cup sugar
1 teaspoon cinnamon
Instructions
Beat egg white until stiff; set aside. In a large bowl, combine egg yolks, oil and juice; beat for 10 minutes. Add sugar and mix well. Stir in matzo meal and salt; fold in egg whites. Pour half the mixture into a great 8 inch square pan. Top with apple slices and sprinkle with half the cinnamon-sugar mixture. Cover with remaining batter and sprinkle with rest of cinnamon-sugar. Bake at 375° for 35 to 40 minutes.
