Passover Apple Pudding

Recipe Ingredients
4 large apples
½ cup matzo meal
4 eggs, separated
½ cup sugar
juice of ½ lemon
½ cup raisins
Instructions
Peel apples and grate on fine grater. Beat egg yolks with sugar until light. Add lemon juice, aples, matzo meal and raisins. Fold into beaten egg whites (which were beaten until dry). Bake in greased 1 ½ quart casserole for 40 minutes at 350°.
