Passover Apple Sauce Nut Cake

Recipe Description

Recipe Ingredients

9 eggs, separated
1½ cups sugar
1 jar (15 ounces) applesauce
1 teaspoon cinnamon
¾ cup matzo cake meal
¼ cup potato starch
1½ cups ground almonds
2 tablespoons lemon juice
¼ teaspoon salt

Instructions

Beat egg yolks until light. Gradually beat in sugar until very thick. Add applesauce and cinnamon, beating well. Gradually fold in cake meal, potato starch, and ground almonds. Beat egg white with lemon juice and salt until stiff. Stir about ¼ of egg whites into batter, mixing well. Fold in rest of egg whites lightly. Bake in tube pan, in preheated 325° oven, 1 hour or until cake tester inserted in cake comes out clean.
