Passover Banana Nut Cake

Recipe Ingredients
8 eggs, separated
1¼ cups sugar
1¼ cups ripe bananas (mashed)
¾ cup finely chopped nuts
¾ cup sifted cake meal
1/3 cup potato starch
1½ teaspoons cinnamon
juice and rind of ½ lemon
Instructions
Beat egg yolks with 1 cups of sugar until light – beat well. Add bananas, juice and lemon rind. Beat hard for 3 minutes. Fold in dry ingredients and nuts. Beat whites with ¼ cup sugar till stiff. Fold into yellow mixture by hand. Use tube pan. Bake in 350° oven from 65 to 70 minutes. Invert and cool for 1 hour.
