Passover Cheese Bake

Recipe Description

Recipe Ingredients

6 matzos
1 lb. Cottage cheese
6 tablespoons butter, melted
3 eggs, beaten
¼ teaspoon salt
½ cup sugar
juice of ½ lemon
powdered sugar

Instructions

Dip matzos quickly in water and drain. Grease 2 quart baking dish or casserole with 4 tablespoons melted butter. Fit bottom and sides of dish with matzos. Mix cheese, eggs salt, sugar and lemon juice. Spread half the mixture over layer of moistened matzos. Repeat with matzos, then cheese filling and then another layer of matzos. Brush top with 2 tablespoons melted butter. Bake in moderate over (350°) until golden brown, about 1 hour. Sprinkle with sugar and cut in squares. Serve hot or cold. ¼ cups each of chopped nuts and dried currants can be mixed with cheese before baking if desired.
