Passover Jelly Roll

Recipe Description

Recipe Ingredients

4 eggs
juice of ½ lemon & rind
1 heaping tablespoon potato starch
¾ cup sugar
½ cup cake meal
¼ teaspoon salt

Instructions

Beat egg yolks with sugar, add lemon and half the beaten whites. Add dry ingredients. Fold in remaining egg whites. Pour into 10 X 14 inch jelly roll pan which has been greased and lined with greased wax paper. Bake in 350° oven for 12 – 15 minutes. Turn out on a towel covered with granulated sugar. Remove waxed paper at once. Trim crusts. Roll up in towel until cool. Unroll and spread with filling, jam, or any desired filling. Reroll. Apple Filling Mix 4 cups peeled chopped apples, (using a hard apple), ½ cup each of jelly (any flavor but grape), raisins and chopped almonds and 2 tablespoons lemon juice. Cooke uncovered over medium heat until apples are tender, chill well.
