Passover Macaroons

Recipe Ingredients
1 1/3 cup flaked coconut
1/3 cup sugar
2 tablespoons potato starch
1/8 teaspoon salt
2 egg white
½ teaspoon almond extract
Instructions
Mix all ingredients together until well blended. Drop by teaspoonfuls on greased and potato starch cookie sheet. Bake at 325° for about 20 minutes or until golden around edges. Place on rack or dish to cool. Servings 24 to 30. Freezes well. Optional: chocolate or cherries can be added to the batter to add a different taste, they can also be dipped/coated in chocolate.
