Passover Sponge Cake

Recipe Description

Recipe Ingredients

9 eggs
1 ½ cups sugar
1 tablespoon lemon juice
½ cup cake meal
½ cup potato starch
pinch of salt

Instructions

Cream egg yolks with sugar until light; add lemon juice. Sift together cake meal and potato starch at least four times and stir into egg yolk mixture very lightly. Beat egg whites to which salt has been added, until they hold a peak. Fold into first mixture. Turn into an ungreased cae pan and bake at 325° for 1 hour.
