Peach Melba Pie

Recipe Description

Recipe Ingredients

1 9 inch crumb crust
Combine:
¾ cup corn flake crumbs
½ cup finely chopped nuts
2 tablespoons brown sugar
¼ cup butter, melted
Blend mixture together and press into bottom and sides of pie plate. Bake at 375° for 8 minutes. Cool completely.
1 quart vanilla ice cream, slightly softened
½ cup currant jelly
1 can (1 lb.) cling peach slices, drained
toasted whole blanched almonds (optional)
1 cup seedless red raspberry preserves

Instructions

Spoon ice cream into crust; pressing to form a smooth even layer. Freeze until firm. Prepare Melba Sauce: melt jelly over low heat, stir in preserves. Arrange peach slices on pie. Garnish with almonds. Pour sauce into serving dish and serve with pie.
