Pineapple-Chocolate Chip Cake

Recipe Description

Recipe Ingredients

1 can (20 oz. crushed pineapple)
2 cups sifted flour
1 cup sugar
1 ½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon each: cinnamon & nutmeg
2/3 cup chocolate bits
1 cup chopped nuts
½ cup raisins, coarsely chopped
2 eggs, slightly beaten
1/3 cup butter or margarine, melted

Instructions

Fit waxed paper into bottom of 9 inch tube pan; grease sides of pan well; set aside. Drain pineapple; reserving ¾ cup syrup; set aside. Combine flour, sugar, soda, salt & spices in bowl. Stir in chocolate, nuts and raisins. Add eggs, pineapple, measured syrup and melted butter. Mix just to moisten flour. Turn into prepared tube pan. Bake at 350° for 1 hour and 10 minutes, until cake tester comes out clean. Cool for 15 minutes in pan; turn out on rack to finish cooling. Store overnight before slicing.
