Pineapple Cookies

Recipe Ingredients
2/3 cup shortening
1 1/3 cups sugar
2 eggs
2 teaspoons lemon extract
½ cup crushed pineapple, undrained
2 2/3 cups flour
½ teaspoon baking soda
½ teaspoon salt
Instructions
Cream shortening and sugar together. Add the eggs and beat well. Stir extract into pineapple and add alternately with sifted dry ingredients. Drop by teaspoon on greased cookie sheets. Bake at 350° for 15 minutes. Makes about 8 dozen 2 inch wide soft cookies.
