Porcupine Meatballs

Recipe Description

Recipe Ingredients

1 lb. Ground beef
1/3 cup uncooked rice
1 egg, beaten
2 tablespoons water
1 teaspoon parsley flakes
2 tablespoons grated onion
½ teaspoon salt
1 (10 ¾ oz.) can condensed tomato soup
½ cup water
1 teaspoon Worcestershire sauce

Instructions

Combine meat, rice, egg, 2 tablespoons water, parsley, onion, salt, dash of pepper; and ¼ cup tomato soup. Mix well; shape into 20 small meatballs and place in skillet. Mix remaining soup with ½ cup water and Worcestershire; pour over meatballs. Bring to boil; reduce heat; cover and simmer about 40 minutes, stirring often. Yields 4 servings.
