Potato Muffins

Recipe Description

Recipe Ingredients

6 medium potatoes
3 eggs
3 slices dry challah
1 tablespoon salt
˝ teaspoon pepper
1 tablespoon sugar
˝ cup corn flakes
˝ cup shortening
1 ˝ large onions

Instructions

Place potatoes and onion in blender. Drain off excess liquid. Soak challah in water and squeeze dry. Sauté shortening with ˝ onion until brown. Add remaining ingredients and mix well. Spoon into greased muffin tins and bake at 350° for 1 hour or until brown and crisp. Makes 1 ˝ dozen.
