Quiche Lorraine

Recipe Description

Recipe Ingredients

9 inch partially cooked pie crust
¾ cup grated swiss cheese
2 medium onions, sliced into rings
2 tablespoons butter or margarine
4 large eggs, slightly beaten
1 tablespoon flour
½ teaspoon salt
2 cups light cream (or 1 cup heavy cream & 1 cup half and half)
½ teaspoon nutmeg
dash of cayenne
grated parmesan cheese for top (approximately 1 to 2 tablespoons)

Instructions

Saute onions in 1 tablespoon butter or margarine till transparent. Set aside. Spread the grated swiss cheese evenly over the bottom of the pie crust. Cover with the onions. Add seasonings, stir. Carefully pour this mixture over the onions already in the crust. Sprinkle grated parmesan cheese on top. Bake at 375° until set, about 30 to 40 minutes. Top will be light brown and puffed. Can be frozen.
