Quick Peach Melba

Recipe Description

Recipe Ingredients

2/3 cup raspberry jelly
2 teaspoons lemon juice
1 (30 oz) can peach halves, well drained
vanilla ice cream (about 1 quart)

Instructions

Combine jelly and lemon juice in small saucepan; cook over low heat until thin and smooth. Remove from heat. Place one peach half, cut side up, in the bottom of each dessert dish. Add a scoop of ice cream and top with warm melted jelly. 6 to 8 servings. Optional: may be topped with whipped cream.
