Salmon Croquettes

Recipe Description

Recipe Ingredients

1 (1 lb) can salmon, drained and flaked
½ cup bread crumbs
½ cup mayonnaise
2 eggs, beaten
2 tablespoons minced green pepper
1 tablespoon minced onion
½ teaspoon salt
½ teaspoon paprika
¼ teaspoon dry mustard
¼ cup oil
flour or bread crumbs

Instructions

Combine first nine ingredients. Chill 3 hours (mixture will still be soft). Shape into 12 croquettes. Coat with flour or bread crumbs. Heat oil in large skillet over medium heat. Add croquettes, brown on both sides.
