Salmon Quiche

Recipe Description

Recipe Ingredients

1 small onion, minced
¼ cup margarine
¼ cup flour
1 teaspoon salt
1 can (1 pound) red salmon
1 cup evaporated milk
2 eggs, slightly beaten
½ teaspoon dillweed
1 cup shredded cheddar cheese
unbaked 9 inch pie shell
 

Instructions

Cook onion in margarine 2 or 3 minutes. Blend in flour, salt and pepper. Drain liquid from salmon into 1 cup measure. Add enough water to make one cup and mix with milk. Gradually add to first mixture, stirring constantly. Cook until thick. Stir into eggs, mixing well. Flake salmon and add with remaining ingredients, except shell, to first mixture. Pour into pie shell. Bake 400° for 30 minutes or until firm. Let stand 10 minutes before cutting.
