Swedish Coffee Cake

Recipe Description

Recipe Ingredients

6 tablespoons melted butter
½ cup sugar
2 yeast cakes
¾ cup lukewarm milk
4 cups flour
½ cup raisins
1 teaspoon vanilla
1 tablespoon lemon juice
½ teaspoon salt
2 eggs
½ cup sugar to 2 tablespoons cinnamon for topping and 1/3 cup nuts

Instructions

Mix all ingredients. Cover and let rise. Knead and roll out into squares about ½” thick. Brush generously with butter and sprinkle with cinnamon and brown sugar. Roll and shape into ring, placing a pyrex cup into center of baking sheet. Cut deep gashes in outside edge with scissors. Brush with egg and sprinkle with sugar and nuts. Let stand 20 minutes before baking in 375° oven for 30 minutes. Toward end of baking, remove pyrex cup to allow cake to bake in center.
