Sweet and Sour Meatballs

Recipe Description

Recipe Ingredients

2 pounds lean ground beef
½ cup dry herb stuffing
¼ cup grated water chestnuts
½ teaspoon poultry seasoning
½ teaspoon cinnamon
½ teaspoon salt
1 heaping tablespoon corn starch
1 tablespoon salad oil
1 medium onion, diced
1 cup ketchup
¼ cup cider vinegar
1 13 ounce can pineapple bits, in syrup
1 small can mandarin oranges

Instructions

Combine first six ingredients and shape into small balls, about 1 inch in diameter; set aside. In electric skillet, heated to 250°, sauté the onion in the oil until transparent. Add the ketchup and vinegar. Drain syrup from the pineapple bits, and the juice from the mandarin orange sections. Combine these liquids with the corn starch and then add to the mixture in the electric skillet. Cook, stirring constantly until thickened. Add reserved pineapple and oranges. Add uncooked meatballs to the sauce. Cover skillet and simmer about 20 minutes or until meatballs are thoroughly cooked. Serve over rice.
