Sweet Potato Tsimmes

2 pounds sweet potatoes
1 cup prunes (pitted)
1 bunch carrots (about 1 pound)
1 cup brown sugar firmly packed
1 large orange
½ cup shortening or oil
Instructions
Boil potatoes until just tender, peel, cut into slices – same with carrots. In a greased3 quart casserole, layer potatoes, carrots, prunes and sugar. Chop orange pulp and rind, mix with melted shortening and top the layered vegetables with the orange-shortening of your choice. Bake, uncovered, at 350° 35 to 40 minutes until brown and glazed.
