Sweet Potatoes Deluxe

Recipe Description

Recipe Ingredients

1 cup dried apricots
2 cups water
1 cup brown sugar, firmly packed
2 pounds sweet potatoes, cooked and peeled
1/8 pound margarine, melted
¾ cup almonds, sliced and blanched

Instructions

Wash apricots and drain. Combine apricots and 2 cups water. Bring to a boil and cook over low heat for 20 minutes or until tender. Stir in sugar. Slice potatoes ½ inch thick and layer with undrained apricots in a well-greased 1 ½ quart casserole. Pour melted margarine over all. Bake at 375° for 30 to 40 minutes, basting twice. Sprinkle with almonds and bake 10 minutes longer.
