Tropical Cheese Pie (low cholesterol)

Baked9 inch crumb crust
1 (3 oz.) package lime gelatin
1 ½ cups boiling water
dash of salt
orange sections, fresh or canned mandarin
1 cup cottage cheese (small curd)
1 large banana, sliced
fresh mint leaves
Instructions
Dissolve gelatin in boiling water, add salt; cool. Beat cottage cheese until smooth (preferably in blender); add gelatin and mix thoroughly. Chill until jelly-like consistency. Line bottom of pie shell with banana slices; spoon gelatin mixture over. Refrigerate until gelatin begins to firm; then arrange orange sections in pinwheel pattern on top of pie. Chill until firm; at least several hours. Garnish with mint, if available. Serves 8.
