Turkey Pancakes

Recipe Description

Recipe Ingredients

1 onion, chopped
2 tablespoons margarine
½ cup celery, diced
3 eggs, beaten
¾ cup soup stock
1 cup matzo meal
2 cups turkey, cooked and cubed
salt and pepper to taste


Instructions

Sauté the onion in shortening for 10 minutes, but do not brown. Add celery and continue to sauté for 5 minutes longer. Mix the eggs with the soup stock; add the matzo meal and seasonings. Mix the eggs with the soup stock; add the matzo meal and seasonings. Add the turkey and vegetables to egg mixture; mix well. Drop by tablespoonfuls into hot oil and fry until brown. Drain on paper towel. Serve hot with gravy.
