Veal A L’Orange

Recipe Description

Recipe Ingredients

4 veal patties
2 tablespoons margarine
1 tablespoon flour
3 oranges
2 to 3 tablespoons cognac
˝ cup stock or consommé
chopped parsley or chives

Instructions

Sauté the veal in margarine until nicely brown and tender. Remove to platter and put one slice of orange on each patty. Put in 250° oven to keep warm. Then stir flour into margarine and juices in pan. Grate rind of one orange into the pan, add the juice plus that of another orange, add the cognac and stock. Bring to a boil. Season well with salt and pepper to taste and add little more brandy and juice if needed. Let simmer for about 5 minutes, then pour on and around the veal patties. Sprinkle with parsley or fresh chopped chives if desired.
