Veal Picata

Very thin veal for scallopini, have butcher pound it. Bread veal with eggs
and seasoned bread crumbs. Brown in olive oil, drain on paper toweling.
Melt ¼ lb. margarine, add juice of 1 lemon, parsley flakes, 3 cloves
crushed garlic, salt, pepper and 1 1/8 cups marasala wine. Pour over
veal in pyrex dish for an hour or more to marinate. Bake at 350° for
30 minutes. Serve with salad and noodles. Use 2 ½ lbs. Veal for 8 servings.
