Vegetable Chinese Rice

Recipe Description

Recipe Ingredients

1 cup rice
4 carrots cut up
4 stalks celery cut fine
4 large onions, diced
1 green pepper diced
¼ pound fresh mushrooms or 1can drained
6 tablespoons shortening
1 cup chicken soup

Instructions

Brown rice in frying pan in 3 tablespoons shortening until brown. In another frying pan, using the balance of the shortening, brown onion lightly; add carrots, celery and onions to rice. Cover tightly and steam. Every 15 minutes, add portions of the hot soup or as liquid is needed for steaming. Use a very low flame. Add green pepper and mushrooms the last 10 minutes of cooking. Add salt and pepper to taste.
