Vegetable Kugelach

Recipe Description

Recipe Ingredients

6 tablespoons butter
¼ cup chopped green pepper
1 cup chopped onion
¼ cup chopped celery
1½ cups grated raw carrot
¾ cup matzo meal
10 oz. Package spinach, chopped
3 eggs, beaten
1½ teaspoons salt
1/8 teaspoon pepper
Sour cream

Instructions

Sauté green pepper, onion, celery and carrot in the fat, stirring occasionally. Cook spinach; drain. Combine vegetables. Add eggs, salt, pepper and matzo meal. Spoon into 12 greased large muffin tins. Tins can be greased with oil. Bake at 350° for 45 minutes or until firm. Allow to cool 10 minutes before removing from pan. Serve plain or with the sour cream.
