West Coast Pot Roast

Recipe Description

Recipe Ingredients

4 to 5 lbs. Chuck roast
2 teaspoons salt
¼ teaspoon pepper
1/8 teaspoon ginger
3 tablespoons shortening
2 coves garlic, finely chopped
3 onions, sliced
½ cup white wine
1 ½ cups prunes
1 cup pitted black olives, drained
1 4 oz. Can whole mushrooms or ½ lb. Fresh mushrooms

Instructions

Rub roast with seasonings and brown in hot shortening. Add garlic, onions and wine. Cover and cook on top of stove or in 325° oven 1 ½ hours. Soak unpitted prunes in 1 ½ cups water for 1 ½ hours or pour 1 cup boiling water over pitted prunes. Add prunes, liquid, olives and mushrooms, undrained. Cook or bake 1 additional hour. Good over broad noodles, mashed potatoes or rice. Serves 6 to 8.
