Zucchini Cheese Custard

Recipe Ingredients
4 small zucchini
2 medium onions
¼ cup melted butter or margarine
3 eggs lightly beaten
2/3 cups half and half cream
pinch of nutmeg
1 ½ cup grated sharp Cheddar Cheese
Instructions
Preheat oven to 350° Peel zucchini and slice; slice onions. Cook zucchini and onions in butter until golden, not brown, and don’t let zucchini get soft. Spoon zucchini and onions into shallow casserole, season. Combine eggs, cream, nutmeg and ½ the cheese. Pour mixture over the vegetables. Sprinkle with rest of cheese. Set casserole in baking pan, pour boiling water around it and bake 35 to 40 minutes until custard is set.
